I would have to go with the Paladin Judgment Armor. The sheer popularity of the set speaks out that that this is the quintessential icon that is the paladin. It not only displays as one of the best detailed sets to date, but the color palette even holds true to the lore that follows its class. The black at its base signifies the impurities the the being itself shoulders throughout its life, whilst the red stands for the courage they must show amidst the battlefield. They charge forward, never to leave the lines as the glint of the golden yellow armour brings hope to those among the warfare, that hope is that The Light is with them.
I still prefer http://www.wowhead.com/itemset=496. Ahh, the days of lvl 60 gear.
Priest tier 5 was by far the best! The wings made me look like an angel!
My favourite is the Warrior Tier 4, Warbringer. Because of it's unique look. The helm itself is very different from any piece of armour that had been seen in WoW, and the shoulders also brought a new look to plate gear. The colouring also makes it a great match to Attumens fiery warhorse.
Shaman Tier 10, the Sanctified Frost Witch set. My main is a shaman, and I love the "proc" of the animal spirits from the shoulders. Even though, by the end of Wrath, most shamans were wearing it.
My favorite tiet is T8. After the recycled T7 it had the "wotlk feeling"and was overall new and freshbut my favorite set is the shaman t10 ilvl 264 version with snow and ice on the shoulders, which made my tauren look like a badass snowmonster/yeti
Malefic Raiment - Warlock T6 - The wings are one reason but the other is that it's usually the chest you need to finish the set and the token drops from Illidan. Great way to celebrate a massive kill like that, finishing off the best set the game has ever had.
