For me it is The Undying. The presure when we finally reached KT without any deaths, scanning the room for voidzones, hoping the tanks would pick up the adds correct, such a relief when KT finally went down without player deaths :)
Reins of the Raven Lord - I got it after 2 months of soloing as lvl80 hunter
Any achievement my friends dont have because they always highlight how they have got one that i dont, so when i do it feels good.
My favorite achievement would be the Loremaster achievement. I was always one to read the quest text at least the first time around, and it certainly makes that achievement true to its name. Countless times I've imparted tidbits of lore I've learned from questing. It really feels like an accomplishment worthy of a title. It was really fun going back through after Cata and experiencing all the new quests and storylines. Witnessing how Azeroth and its denizens have been changed over the years as the story comes to life. Loremaster completely immerses you in the World that is Warcraft and what more can you ask for?
for sure. Simply because it was well, such a long and strange trip! I love how it lets you explore parts of Azeroth that are usually overlooked and gives you a wide variety of challenges (and even more importantly, rewards!)

For me, it would be because of all the lovely quests and the whole experience I got from it. I had to think a bit about this, as I am really proud of my Glory of the Icecrown Raider (25 player) aswell! Took my wotlk guild a little while to complete, but it was a god damn awesome experience. :3
I'm still a bit stoked over "I Had It In My Hand" on my hunter.
If I have to choose one achievement, i'd have to say that i'm most proud of my Charger achievement . I remember doing the quest in patch 1.12.1 when 600-700g was hard to get for a casual player like me, I managed to struggle myself through the gold gathering though. I was really stoked when I got my mount and I felt like a "GOD!" amongst all the other paladins with their old charity chargers (please consider that this was in 2006 and that I was 13 at the time).And I'm really glad they decided to add an achievement for doing the quests, so that the people who did the quests can stand out from all the new paladins that get their mounts for a fraction of what any old schooler had to do for it.
Either The Frozen Throne (10 player) on my Death Knight (I was MT and Raid Leader for our casual guild) or Exalted Argent Champion of the Alliance on my Druid.

Bounce - there's no doubt about it. I spend about an hour on that trampoline thing, and all that time i was doing something wrong so i was falling down from it at 17-19 "stacks". While i was trying hard complete it, about ten other players came there, made it with ease, wrote ":)" to me and flew away... ~~ Sooooooooo annoying!
I'm proud on making Alone in the Darkness (25 player). It took us 3 weaks to do it. The mechanics were just hard to set up. But we did it, and we were not alone any more :D
Insane in the Membrane would be my choice. Me and my brother both farmed for months to get all the things we need for it.Week of killing pirates and completing card decks, farming books and diamonds in Dire Maul.But it was all worth it at the end. We had the best Achievement ever:Our guild was working on killing The Beasts in TotGC25H at the time, and once we had it all ready, we leveled our Faire rep untill we where just one deck away. Then in the middle of the fight we summoned the guy and both turned in our last deck. 2 second later everyone trying to click the dude aswel to get the achievment, raid wipe, but now we got an epic title and an epic story to tell. Worth every second.
