Just gotta sack up and power through it really. It's definitely going to get boring and repetitive at times.
However, some of the long quest chains can be more interesting (and have better rewards at the end too), and you can always run instances for a break in the monotony.

I think 70-80 takes about 8-10 hours per level, but it does get better. Also, try to make sure you always have rest experience, level with the WG bonus, and use alts / death knights to break up the routine.
After your first 80 though, you can pick up some shoulders to increase the leveling time on alts by 10%, which will make it easier to level in the future.

Dude...I am in exactly the same place now...I said F it shortly after I hit 71 and headed to Dragonblight.
My DK and druid are good for breaking up the monotony every once in a while, but between wanting to hit 80 and wanting to save gold for my flyer (I just now realized I can't fly in Northrend until 77, so that motivation is somewhat diminished), I just want to level my hunter.
Getting my druid to 68 will be nice for flight form.
