I think pallys are better tanking mobs and warriors are better tanking bosses.

Rocky road is the best tank. Sure, vanilla has a lot of avoidance and chocolate has all that threat, but neither is anywhere near rocky road for health and defensive panic buttons.

I'd honestly level the Paladin. Not only could you be both a DPS and a tank, but even have the option to heal if you ever wanted to explore that avenue of Paladin awesomeness. Warriors are nice DPS and tanks, but I've yet to see one top the healing meters, knowwutimsayin?
Warriors are great tanks, and I love the feel of them -- they're much more involved, if that makes sense. Both get fun and have unique challenges to playing at higher level, but while leveling, warriors are much more fun, as you don't just put down Consecrate and wait for everyone to kill the mobs.
But again, a practical solution would be to level your Paladin. Once you hit Northrend, tanking gets a bit more fun.
EDIT: Wanted to point out that while Rocky Road may be a great soak tank, he's always draining Strawberry Wafer's mana, which leads to a lot of downtime. Vanilla is clearly a better tank, as long as Hot Fudge doesn't do over 2k DPS.

Warriors also suffer from diminished rage when they over gear the content (hence less threat), whereas this is much less of an issue for a tankadin.
This use to be true, but not any longer. Generally speaking, if a warrior outgears an encounter they do more damage and thus generate more rage. Also being able to block most trash mob damage generates rage as well so they both take less damage and also does more damage. But the warrior has to know to use a block set for the easy heroics, as avoidance tends to lead to the problem you pointed out.
Back to the main topic. As tanks they are both the same and can do the same job. Warriors have slightly more CD's. Paladin threat is higher due to mechanics and undead. But as most said, each tank can do the job.

My view of the breakdown on tanking:
-Paladin:
---Handles AoE the best
---Health drops at an average, sustained rate
---Has an ok amount of "oh $#!7" buttons
---Best quality: AoE tanking
-Death knight:
---Handles AoE well
---Health tends to drop in spikes, but spikes are relatively infrequent. This is due to their lack of blocking capabilities.
---Has the most emergency buttons
---Best quality: Emergencies, generally preferred boss tank
-Warrior:
---Handles AoE manageably
---Health drops at an average, sustained rate
---Has a good arsenal of emergency buttons
---Best quality: Has a button to handle any situation, however said warrior tank must be competent enough to manage all of them.
-Druid:
---Handles AoE poorly
---Health drops in spikes due to the only avoidance being dodge. Not as bad as it used to be, but see their best quality for a better understanding.
---Has a relatively small number of emergency buttons
---Best quality: Your drood tank just might have more health than the boss they're tanking.
Personally, I play a paladin, but that's just because it's what I leveled a long time ago. I would like to play a druid tank, but as for DK's and warriors I would rather have a frosty dps or an arms warrior. That's just my preference.
Note that I've never played any other tanks than a paladin tank, i'm just going off of word on the street and what I see in their spec, feel free to criticize/support me. I have the feeling I'll get more criticism than support.
*In the end it's really all just what you like best, just like every other class in WoW.*
