for what it matters at least on my server feral druids and rogues are almost extinct, meaning you could gear up the druid pretty fast. where as the paladin is gonna have to compete with warriors and dk's for loot.
personally i find druid tanking very simular to warrior tanking, so you might want to check first if you like druid if you don't like warrior.

I tend to find druid tanks squishy. Pallies are indeed the best tanks at the moment, however they have to compete against other pallies, warriors and death knights when it comes to loot. I know a DPS isn't supposed to roll on your tanking items if he wasn't tanking, but...
Also paladins are okay at group healing, I used to heal the raid when people took aoe damage, and thanks to the beacon of light it healed the tank at the same time. You won't be able to heal large groups at once, but your tank won't die even if you are healing someone else.
If you level a pally, I would level as retribution even if your final goal is to be a tank; just have a tanking set and when asked to tank an instance, pop righteous fury and go ahead. You don't have to be prot specced to tank while leveling, and it won't be too different from a prot paladin's perspective, you'll miss some spells, you'll have some others that will even out the difference.

Maybe I'm running with the wrong druids. The fact is that when I'm healing on my priest, the tanks I hate healing the most are druids. They really take way too much damage. I can cast a shield on any other tank and sometimes it's still there when Weakened soul is gone; but a shield on a druid will be broken in under 5 seconds, and I have to spam heal them.
Personal experience, nothing more.

well what's 'tank of the day' has little meaning when considering leveling a toon from 1 to 80 and getting them ready to raid. Next minor patch may tweak things to work differently.
I've never tanked on a druid, but I now have a level 70 druid, on which I'm healing and moonkining.
I tanked on paladin upto and including half BT, but nothing in wotlk. I also healed on him up to TK, and nothing in wotlk.
Anyway, for healing: the thing some fights really favoring instant casters such as druids. Think Crypts - where paladin's 1.5 second FoL turns into 10 second cast. Paladin is basically worthless there.
It's true that some fights are easier on a paladin, however you won't feel worthless on a druid, since at least they have some direct healing spells, whereas paladin has none.
Tanking: Well in WoTLK I'm tanking on DK - my main. In BC I tanked on warrior and paladin. Out of these 3, Paladin seems to be easiest. You got great aoe, you got a pull that hits 3 mobs, in essence, if 2 groups are coming from different sides and everyone's standing on you, you could concecrate little to the left, and avenger's shield to the right. No class can match that. (worked for me in ssc)
Also keep in mind that as a druid, you can do this: heal, tank, melee dps and ranged dps. On paladin you can't range dps. That may be a deal breaker for you, I don't know. Usually if you're healing or tanking, you won't be asked to do the opposite, you'll be asked to dps on some fights though. And most fights favor ranged.
We currently don't use bears to tank. I do hear they are lagging behind the 3 plate tanks. I don't think that's a big deal, it may either not be true at all, or maybe patched before you level to 80. Would you rather fight over gear with rogues - who can use the gear for dps, same one as you need for tanking? Or do you want to fight over gear with warriors/dk's?
You may also consider the server you're on, how are paladin tanks treated? what about druid tanks? I think on a low-pop servers, people tend to lag more. You may find 'only warriors can tank' mentality.
