The SP isn't a cap it's just a point were other stats become more important. Has nothing to do with game mechanics changing just that your sacrificing other stats for overhealing
The avoidance badshahkg mentioned is more commonly unhittable which also includes block and not only avoidance.
But as he said avoidance cap would be 102.4% that's when you avoid all attacks.
There's not really that many caps beyond the ones badshahkg mentioned.

I'd say it changes even at 2000 SP most will say 2100 and honestly i feel no need what so ever for those last 100 SP.
I'd rather be critting alot more.
Before 2000 SP: Int > SP > Crit > Haste
After 2000 SP: Int > Haste > Crit >SP
The reason to SP and haste switching places is because after 2000 SP you'll pretty much only contribute to overhealing and then getting the heals out quicker is more important instead of making them bigger.

a comparison of the items you mentioned.
I'd go for the Cloak of the dying. Has superior int, only 5 crit less than deathchill, mp5 aint all that bad, you lose all the haste though and gain a little SP.

Hit cap is 264 (8.02%) The .02% is up in debate though
102.4% avoidance is when it guarantess you will block, parry, or dodge every attack that comes at you (some call it block cap)

unhitable
the avoidance cap is also 102.4% but that's when all attacks are avoided (dodged/parried/missed).
People call it block cap because after reaching unhitable, dodge, parry and miss will start to push block off the charts. In other words more block is useless. Thus "capped".

Misinformation is bad.
540 is not the Cap, its the minimum required for raiding.
102.4 IS the Mitigation/Avoidance Cap after popping Holy Shield. How you get this is not as important as just getting there. This is the total number when adding the Miss chance from your Defense Skill + Parry + Dodge + Block skill.
To find if you are at Block Cap(102.4) there are several macro's scattered around these Forums, and one on Wowwiki.com that will post the total number in your chat box.
It's what we call a "Soft Cap". A point where it no longer gives it's full benefit, but still gives partial benefit. That's the point where it ceases to be the most important stat to stack.
Same thing applies to the SP cap, and the expertise (for ret) dodge cap.
