To be honest, I only have a herbalist and not a skinner, so my view on this may be arbitrary. The gathering professions mining and herbalism can be great if you have a fast mount, as they require no fighting. However, even if you only need to fly from node to node, you have to take other farmers into account. Some days you will find next to nothing, and on off hours (particularly in the mornings) you almost have the entire Northrend to yourself.
When you're a skinner however, you can pretty much decide for yourself how much farming you want done. The downside is you have to be active the whole time.
I would say the differences between the two are marginal at best and that it comes down to what you prefer to do. If you're still unsure, I can point you to a great column at WoW Insider that deals with this issue:

Skinning means gathering TONS of Borean Leather and spend hours trying to sell them on AH/trade channel. Be prepared for that.

It depends what your other prof is. If it's Mining, stick with Skinning. If it's not, go get Mining :)
Cheers.

Herbalism > skinning for financial purposes. hell, on my server, just about every profession makes more money than skinning... not to mention Lifeblood is about 1000x as useful as a measly 32 crit rating. >.>
and to the OP:
You Really Don't Have To Capitalize Every Word Of Your Sentence. Just The First Word Will Suffice, Unless It's A Name, Title, Etc..
