Assuming you are not hit-capped, Accuracy is the largest dps/tps enchant for prots and Last Laugh is definitely a worthy weapon to put it on. The 2 new Ulduar weapon enchants are a joke. Put Blade Warding on if you like the look, but don't expect it to be any good.
Edit: That is not to say Blade Warding will not be tuned in the future. It is possible that it is currently bugged at the moment and not working as intended. I wouldn't hold my breath though.

I use blade warding. I don't need any hit enchant even though I only have like 5% hit. If I was going to go for a threat enchant I would go for 20 strength. But I don't need any more threat so I wen't for an avoidance enchant.
A lot of people say blade ward sucks because it doesn't stack and procs only off physical attacks. I have seen it stack 2 or 3 times multipul times, and I even have a screenshot of it stacking 4 times, giving me 800 parry rating. I normally have 360 parry rating, so it should have put me at 1160 parry rating but it wasn't that high with everything procced. I think I hit a parry cap.

Did they already fix it then? When I had it, the proc rate was abysmal (was lucky to see it every 3 or 4 pulls) and as soon as you parried after getting the buff, you lost it.
As for Potency versus Accuracy for a threat enchant, math is math. However, Potency does have the benefit of being significantly cheaper and giving a small boost to block.
