I'm level 43 Enhancement and have Herb/Alch as well. Both of them at 300 at the moment.
Ghost wolf ( with 2 talents from Enh tree), Waterwalking and Earthbind totem are the main spells I use for farming herbs. Ghost wolf helps you to herb quickly and to escape and regenerate health if needed, Waterwalking lets you get to other territories via water ways, and EB totem lets you escape from the packs of mobs behind you :)
Transmute is a real moneymaker :)

I'm using tailor for cloak enchants, and enchanter for ring enchants, plus they both give a boost to gold - enchanting from DE'ing and selling mats, and tailoring from the bonus frostweave you get which in hc's and raids is pretty high if no other tailor is around. Herb/Alch may give you gold but ultimately are not going to enhance your stats - JC is probably the best for that, but I do like the +19sp per ring enchants.
The question is do you want it for the end bonuses to stats, or for the money you can make, or to be useful to your guild, etc. Stats are the crafting profs - JC, Enchant, Tailor, BS (though I think Tailor is more useful for casters) money is more the farming ones, mining/herb/skin
