Many people go with the "Strength! The more the merrier!" strategy and simply socket +16str all over.
I on the other hand tend to make sure I have enough hit rating (~8%) and socket for it should I need to before putting +16str in all.
The stat value of Expertise is also fairly high for DK's, but I'm not sure whether it's worth more than strength, iirc it's on par-isch.
And undless you're trying to match a meta, ignore the socket colour (undless the bonus is worth it)
So basically: Hit (until cap) >
Strength
/expertise(until cap) > rest

Never socket stamina (only +stam +xxofensive stat if you're trying to match a meta).
Always socket offensively.

Well your armory shows you're missing sockets in your boots and chest.
Since you mention your legs, if you dont socket accoring to the sockets colour you wont get the socket bonus (=greyed out). In your case your legs has a red and a yellow socket, you've placed 2 red ones in them ==> No socket bonus (but it's a defensive bonus so it's nothing worth striving for)
You're also a bit short of hit, I'd suggest you socket some yellow sockets for some +hit until you reach the 2-h cap (8%)

Hmm I think you've misunderstood how socketing and socket bonuses work.
Basically:
Socket bonuses are stats that are granted to your character if you place gems that share a colour of the free sockets in the piece of gear.
Say you have a pair of boots with a red and blue socket, it has a socket bonus of +6hit.
Player A places 2 Red gem into the Red and the Blue socket.
Player B places a Red and a Blue gem into the Red and the Blue socket respectively.
Player A does not receive the socket bonus since he did not socket according to the colours of the sockets.
Player B did socket the boots according to the correct colours, and will receive an additional +6hit rating since the socket bonus is now activated.
The socket bonus is only dependant on what colours you place into the sockets, not which stats
In short:
If you "match" gems with the correct colour of your gear's sockets, you will receive the socket bonus.
You dont "have to" socket according to the colour, you're free to choose what you'd like, but you wont receive the socket bonus if you dont match the colours.
The colours of the gems you place in the sockets also dont have to be the "exact" same colour, for instance Purple gems match both blue and red, Orange match both yellow and red and Green match both blue and yellow.
When socketing your gear for maximum dps output you should keep the socket bonus in mind as sometimes it might be better to go for that +8str +8crit and receive a socket bonus of +6str instead of ignoring the colour and socketing +16str

Also, just for clarifications, the meta gem in your helm (the +21crit 3%+ critt dmg) is not a socket bonus.
Meta gems require certain gems (all over your gear) in various colours (for instance, "requires 2 red and 1 blue). To some extent it works ´like´ a socket bonus but the difference is that it's a Meta Gem and the sockets required can be spread all over your gear.
