Post your armory so it'll be easier to give you tips & advice. Hard to tell you what the solution will be if we can't see the problem. =)

Ulduar is heavy of the aoe damage and a holy priest are countering that with a heavy mana costing spell (PoH) but I in full crit naxx 25 gear don't notice mana problems in 25 ulduar, as holy or disc. My fellow priest recently got tons of haste instead crit (Due eveyrthing being a upgrade) and is feeling the mana problems. So a armory profile can help.
In ten man you got less buffs so mana is something to watch out for. I guess the main problem is either you are overhealing way more then needed or you are other healers are slacking. You really need to build up for the heavy AoE and then boom heal and then wait till the next big aoe moment. It works for me on most bosses.
Also you sound like you distrust your fellow healers, if you got people assigned to a tank don't bother healing that tank unless those healers are (brain)dead or dc. For ten man if a healer is undergeared give him the more easy jobs and force him more into naxx.
But I only can make guesses, to help us helping you say some things like: Healing meters, effective healing, your spell priorities or an armory link. Also it would help to know the kind of buffs you got during ten man (or classes). Only then we can truly pin point the precise problem and completely help you with that.

I agree, an armory link can help alot. Not only does it show us your gear/stats, but it also shows your talent tree.
If your having mana problems, make sure your talented in all your mana efficiency and increased regen talents. I've seen alot of priests skip out of
Healing Prayers
; that's tons of saved mana every time you cast PoH and even saved mana on PoM, both spells you should be casting quite often.

Mana isn't horrible in Ulduar if you have most of the bis pieces from t7 raids. However, I know half the time on boss fights I end up calling for an innervate or use a mana pot. Part of this is because 2 of the 6 healers we bring to raids now are not that great, so the rest of us have to compensate. Literally, on Kologarn we were wiping over and over until the other holy priest actually started healing for more than 8-9% on the healing meters. He bumped himself up to 13% and we got by finally.

I'm so glad I took Crit over Haste. I still have yet to set foot in Ulduar, but it's nice to know I'm better prepared. Of course I will be studying up on the battles beforehand.

Really, for any healing priest, and especially discipline, but also holy, glyph of PoH is absolutely amazing now that PoH is party targetable. Amazing.
