What do you mean by "interactivity" ?
In the first Witcher game, to craft a potion, you had to have ingredients which contained some "elements". There was a variety of ingredients for each element. Some uncommon ingredients, aside from a common "element", had a "modifier".
When brewing a potion, you could have the game mix whichever ingredients it finds first in your list, or you could specifically brew the potions using the herbs which contained "modifiers". If you were able to find and mix herbs that all had the same modifier, the modifier was contained in the potion. This worked as an additional bonus effect on top of what the potion normally does.
Recipes for new potions were found in books in the game. However, you could always just mix a random combination of ingredients and brew them. Mostly, you would just create an item which would slightly intoxicate you and give you no positive buffs, but you could also create any of the game's potions this way, before finding the proper recipe. Interactivity.

I was more thinking minigames fused with professions.

EQ2 has a simple, yet interactive crafting scheme. Just sayin.

That's a really cool crafting system... Now apply it to the average WoW player... I imagine it would be something like
this.

Depends. TES Alchemy was kinda various in how many effects you could have in potions and stuff, but I found the results kinda bland and boring. And in the TES games, being a lot into alchemy meant breaking the game, because over-using always lead to OP-ness.

Yeah, I never really touched TES alchemy my first time through. The second time around, I tried it and pretty much spent my time throwing *!@# together to see what came out. It really didn't feel like there was anything to it. But it was nice having some extra fatigue/health potions, I suppose. That's all I ever got out of it.
I collected a lot of Nirnroot but never actually did the quest. I didn't feel it was worth going after. Is that where the OPness comes in?

I might not be able to get Dead Island cause I noticed the bookstore has The Walking Dead in english and I don't know how I'm supposed to resist that.
Just noticed that heh; and you aren't suppose to resist the Walking Dead ever.
Everyone in New Vegas hates me now. This game just got very annoying.
Well you are super evil so.....
