To answer the last 3 questions
1)
Rooj:
No, you cannot use the BOP benefits after you drop the profession. If you inspect someone else you'll see red text that shows the profession (with required skill level) is required for it to work. If you drop the skill the bonus points will just turn off.
2)

Read the posts and decide for yourself, the item comparison for class roles in specifically. It depends if you want to be a bear/cat/owl/tree. If money is a problem get 2 gatherings

ALL Bop benefits listed here will NOT WORK if you drop the profession.
If you inspect someone with the benefit you'll notice that it says "requires X profession" underneath it and its red if you don't have that profession.

A possible correction for 25 Crit Rating: ~1% Crit at level 80 (Master of Anatomy (Rank 6)) If you check
here
at wowwiki, you can see that the current formula for Crit at lvl 80 is more like ~0.51% for 25 Crit Rating :(
(Master of Anatomy (Rank 6)) is underpowered imo.
I'm pretty sure it's getting changed in 3.0.8?

Word on the street is that 3.0.8 is bringing skinning up to 32 crit. Which brings it close to even with the other professions that offer crit

Great guide, I found a typo though ;)
Stat Comparisons (between professions):
Tanking:
Herbalism = 2000healing/3mins (11 heal per second), not on GCD can be tied to other skills to always be used.
Mining = 50 stamina
Alchemy = 320 HP (Flask of Stoneblood)
Enchanting = 48 stamina
Jewelcrafting = 33 stamina
Blacksmithing = 60
atamina
or 40 Def or 40 Dodge
Leatherworking = 50 stamina
Inscription = 32 Dodge Rating
Tailoring = 300ap/15second proc from Swordguard Embroidery (highly not worth taking tailoring for this)
Engineering = variable based on value of crafted helm and hand enchants, gadgets are priceless (like a mother's love, not the good kind)

I agree with you paco. The benefit of not worrying about gemming to fill a meta requirement or downgrading gems to fill a socket bonus is very good.
However, i can't really provide a number for those minor benefits since everyone's gear will be different and they will have different socket bonuses.
Maybe i'll add a side note so people don't take the numbers listed as the only benefits.

With each profession awaiting some spiffy new items in a future release (JC's await epic gems, tailors await cloth sets, etc) would it be reasonable to assume that weapon smiths will be gaining special weapons once again? That's basically the only reason I picked it up on my Death Knight, aside from the two extra slots.
