Myth, you are correct. You'll gain 2 bonus slots and 3 bonus gems, but just because you have slots doesn' t mean your JC gems will benefit you more.
I didn't include engineering for now because the bonuses at the moment are somewhat intangible and dependent on what you have available. Engineering's main draw is the ability to make your own helms and other gadgets. The bonus you gain from the helm will depend on what you have available, if you have no access to good helms then the engi helm will do a lot, if you are the bleeding edge of raiding those helms will be obsolete.
Gadgets also can't really be measured, since a mailbox/repair bot/motorcycle don't really help you fight a boss. I could make a mention of the hand enchants in the next update, but they seem more gimmicky than useful.

Add the tailoring profession under section Caster DPS / Healing. The
Lightweave Embroidery
equates to about a 24DPS increase for casters.
Overall I've found this to be a very good reference to determine what professions are best for how you want to spec your toons.

@Benedict: BS is a very strong choice right now, but if you are a cloth user you might want wait untilt he BOP stuff comes out.

Actually, I read on either the Lightweave Embroidery page, or the haste to cloak enchant, but that being one of the only notable boosts for tailoring, it's kind of not worth it. Getting the best haste to cloak enchant equates to about 1.4 less dps, which isn't really alot of reason to keep tailoring just for the lightweave...
It's not worth it in my opinion..
Math, as posted by Casualblair:
Assumptions:
1) Casting 2.5 second, direct damage spells only (haste will be more popular, so 3s spells aren't adequate)
2) Internal Cooldown is 45 seconds, 50% proc rate
Therefore:
DPS of Lightweave Embroidery = (1200+1000) / 2 / 45 = 24.4 DPS
45s / 2.5s = 18 casts exactly. 50% proc rate makes this 18.5 casts on average to proc.
18.5 casts x 38 spell damage (100% coefficient) = 703 / 45s = 15.6 DPS
Keep in mind that the spell damage applies to other casts (Scorch, DOTs, etc) but overall the dps increase is less.

Now the above poster made an interesting point about haste. Assuming you do enchant cloak haste, this is 23 haste rating which equals .7%. And also assuming you do 2000dps without either enchant, the lack of haste is a loss of 14dps maximum (haste scales negatively as you accrue more).
This makes Tailoring 10.4 DPS (minimum) and Enchanting 29.6 DPS (average)
Until tailoring gets a buff that does not replace an already satisfactory enchant, tailoring is sub par.

Currently they haven't implemented the Epic Gems, so the highest cuts are the rares. This means the comparison numbers are off.
e.g.
Runed Dragon's Eye vs Runed Scarlet Ruby is 32 vs 19, giving +13 bonus. For three gems this is +39 damage.
Enchanting gives two rings at 19 each for +38
Leatherworking gives 67 spellpower in a slot that can get 30 for +37.
This means that currently JC is slightly ahead, but it's a negligible difference, especially if they implement the Epic Gems. However JC has an additional advantage that the Dragon's Eyes make meeting socket and meta gem requirements much easier, commonly replacing blue gems with straight damage and still getting the socket bonuses.
