These videos are not made for you. Obviously videos about running Heroic instances are not targeted at raiders in BT/Hyjal and Sunwell. They are targeted at people still running Heroics and have not yet raided (i.e. the 80% of the players who aren't raiders). I know, it's surprising, but not everyone in the game raids +3 days a week and has all epic gear. I'm actually glad that, for a change, there is something for "the little people".
The rest of your post is very good, but I feel the need to respond to some of the things in here:
1. You're right; it is "for the little people"; for the "80% of people who aren't raiders", but how many people is that, really? I'm willing to bet that a good 60% of WoW's population raids at least 1 time per week, and a separate 30% of them (Excluding where things overlap) are PvPers who also run Heroics regularly for badges for gems and for fun, un-scheduled raids (Kara PuGs with well-geared raiders from well-respected guilds, for example) -- So, all in all, you're looking at 90% of people who are well-versed in these instances, especially the easy ones, and especially when TBC is in its last throes and its last major patch before Lich King; therefore, for whom this series is not.
So why, then, is this series being broadcast on
the biggest WoW-related database
? Surely, if it's for a minority, as you claim, WoWhead should just be linking to Project Lore's home website and leaving at that: There shouldn't be all this excess: The embedding of the videos into WoWhead's own webpages; and the forum topics dedicated to commentary (Protip: The videos already have a comments section on their own website)
2. Just because someone isn't in BT/MH/Sunwell, or doesn't raid 3 times a week, that doesn't make this video series "For them". "Casual gameplay" is often confused with "Scrubby gameplay", because there are many "casual guilds" on many servers that don't actually engage with the game one iota. They're happy to just play it as it comes; raiding when they like and getting through the content at a very slow pace because they don't want to expend the energy to actually max out their gear for that particular progression level in order to clear content. Those guilds, to other casuals, who, while they only raid once a week, put all their effort into preparing for that one day per week, getting every consumable they can and running 3 heroics every day to get a new piece of gear before that raid comes along, are not "Casual guilds"; they're "Scrub guilds".

I should clarify that when I say "raiders" I mean true end game raiders, people who are on the final raids in the game (BT/Hyjal and Sunwell). I don't really count Kara as raiding, because, honestly, a trained monkey could do Karazhan with PuG.
Progression: Instances --> Heroics --> Kara. Sorry. If you're in Kara, you already know a thing or two about heroics. Even if you have welfare epics, you still have to do heroics to gear yourself up pre-Kara, unless you're being carried by 2 T4/5 tanks and appropriate-level healers. That's just a fact; and attempting to downplay the difficulty of Karazhan just because it's the "Entry-level raid" that "All raiding guilds have cleared" will not wash.
It's not good enough to claim that it's only that 5% you've cited who won't find this interesting.
Many
guilds are seasoned with Heroics, even if they're only killing Gruul and Malchezaar every week. You don't need to be in Sunwell to know a Heroic backwards.

I quite like the whole concept of this show, although I feel some things could be done better. The main thing is that some of the episodes really are uneventful, even if theyre logical in terms of progress in the particular dungeon youre in.
For example 3.1, while its fully logical that as its the first episode of the Mechanar youre dealing with the first miniboss, but theres no action at all. You kill three or so trashpulls and then a miniboss that requires no tactics, you dont even have to talk to kill him. Im not criticizing how you killed him as I think its impossible to make that miniboss fight entertaining to watch, I just question the logic of centering a show around him as hes pretty dull.
Overall I just dont understand the whole concept of dividing an instance into one show per boss, at least not in any sort of 5man dungeons. I think the show would be more entertaining if you created a longer show with the entire dungeon, but that might be only my personal preference.
All in all I think the show is quite entertaining though, and you being casual and not as experienced as some more hardcore players is in my opinion part of the charm, even though not taking the game seriously might in itself prevent you from doing some of the more entertaining parts of PvE WoW has to offer. While I do kind of agree with the criticism regarding the actual educational value of Project Lore (it is true, the majority of people who will be watching will know the instances youre running already) I still think the entertainment value is good, even though it maybe hasnt reached its full potential yet.
I think youre doing a good job with the show, thanks for taking your time to do it.

Wow! I was fairly sure they weren't going to be able to take Nethermancer Sepethrea down. Now, I suppose they could have made several attempts at her and just shown the one where they downed her, but I'm actually ok with that.
The fight that they showed in 3.4 was very intense and engaging, and had me cheering for them as I would a sports team. While they may not be incredible WoW players, what they provide is entertainment and should be taken as such.
Sure, I'm happy to pick up a new trick for dodging trash here and there, but in general I'm watching for the entertainment value, and on this fight I think they provided splendidly.

These videos are old-ish. These guys have a lot better gear in the armory (the tank has the SSO shield, rogue has completely different weapons, etc. And they've all got hundreds of badges worth of SWP/ZA patch badge gear o.O and their healer's enhancement, with fairly good gear too).
