But as my Hunter is only 81, I have to go to the Wandering Isle.
How do I get there? I haven't played any pandaren and have no interest in starting one just to see how to get to the zone.

You can't get to the Wandering Isle; just like you can't get to the Lost Isles. You'll just have to wait.

I'm level 86, never seen one you can capture, but when I bought the collector's upgrade, It seems that I had already tamed one... (Lucky quilen pup)

If you have an agreeable group, I believe you can tame one of the mobs in the Mogu'shun Palace instance without having to go anywhere (requires level 87).
Otherwise, the first reachable quilen are the Stone Guardians in Kun-lai Summit. Unfortunately, they are level 87, and you must be at least that level to tame.
