I suggest you create a character on a high- or full-population realm and gain firsthand experience, you know, firsthand. Run into Stormwind, check the AH, observe trade chat, inspect peoples' gear, etc. You'll get a better idea if it suits you that way than trusting some stranger's opinion on a message board.

I also agree with the common sense approach suggested by Hamandeggs. Can I also add something to the pot by asking, how does one determine which realms are Alliance/Horde High/Low populations? I used to use WarcraftRealms.com but this site seems unkept these days - is there another site that might help?

Your reluctance to use a website that provides population data is like tying a hand behind your back. Assuming you're looking for really high population server, there aren't many that fit all of your criteria, so it could be easy picking one. Maturity is subjective and can only be evaluated first-hand, so you'll need to get in there and see that for yourself. But you can get a decent preview of PvE/PvP, high/low population, and Alliance:Horde ratios on several websites.

I agree--they might not be totally accurate. But neither is someone's opinion. What various players would call a
high
population or a
good
Alliance:Horde ratio is relative and something you may not agree with. I would at least compare and consider the numbers the sites contain, combine it with input from players, and take both with a grain of salt, if I was looking to make the significant decision of transferring servers.
