I just respecced destruction cuz I have not tried it since it's revamping. I got the basics down, but one thing I'm not sure about.
How many embers do I build up before I use chaos bolt? Do I wait til I have all 4?

I haven't paid alot of attention to destro since launch so I cannot speak to the overall DPS efficacy of saving vs. spending embers, but from what I've read and experianced before the launch I'd say that you should save embers when
You are approaching CD time
Dark Soul: Instability
+trinket+pot...
You are approaching a burn phase
It'll take a while to build embers to capitalize on those situations the most so be aware that 'soon' could be a rather long time, you might find that you have to build embers for a while to setup for either of those situations. If none of those are approaching then go ahead and use'em as you get'em. But the times in a boss fight where neither of those things are happening 'soon' is rare.
The two things you want to really avoid are
having embers at the end of the fight
capping your embers.
Other than that I feel that you can use'em however you like without loosing much dps.

This spec is very odd. It's basically immolate and incinerate spam. That's 99% of it. Maybe I'm used to Demo's craziness. To boring imo. And the burst isn't really any better then the others.

Through what i have experienced with destruction is that you want to keep your burning embers at around 3.5, I had a trinket that was not on use so i would keep it around that range till it popped. Thats when you want to pop all your cd's and cast back to back chaos bolts. The immolate on the target should fill up that last 0.5 burning ember for a final chaos bolt. You never wnat to cap your embers because this is ultimately a loss in dps.

Ok just to clear up things, here's how to manage your Chaos Bolts.
You should only use Dark Soul: Instability with your trinket(s) (if you have one), after pooling 3 burning embers. Keep watch of the phases of the fight to make sure the boss does not disappear or become immune right after you pop them. This would make them useless.
Now, your Dark Soul has a 2 min CD, so during the down time, you should cast at least 2 chaos bolts, as you can easily restore all 4 before your Dark Soul and trinkets are ready. Keep in mind to watch for the Backdraft buff after casting Conflagrate, as you do not want to waste them on Chaos bolts. Instead, you should be casting Incinerate to consume the buff. Also, to help gain embers very quickly, you should use Shadowburn as much as possible. For example, if the boss spawns adds, make sure to Shadowburn them. This will cause you to restore a burning ember, and sometimes gain an extra one. (Not sure exactly what mechanics control that) After that, switch back to the boss and unload.
Q? - When should I use Chaos Bolt?
A - After you pool 3 burning embers. Depending on your haste and procs, you may even be able to cast a 4th one before your buffs fade.
Q? - What if my Dark Soul and trinkets are on CD?
A - Use Chaos bolt after gaining 1 burning ember, repeat 2-3 times. You should be able to recover them before your buffs are ready.
Q? - What is my stat priority?
A - Spell hit (15%) is required. If you miss a Chaos Bolt with buffs active, you will need to cast it again, and will result in a MAJOR DPS loss. Mastery is your second best stat. Stack lost of mastery.
Q? - Should I spend my Backdraft stacks on Chaos Bolts during Buff downtime?
A - Avoid that as much as possible. This will slow down your ember generation and will cause a DPS loss.
Here's some macros that may also help for different encounters.

/use 13 or 14 (Depending on what slot your trinket is in.
This macro will cast both your darksoul ability and your trinket at the same time.

/cast Shadowburn
This macro will stop casting your current spell, and use Shadowburn. This will be helpful when adds go down too quickly for you to finish your cast before casting shadowburn.

/cast Fire and Brimstone
/cast Immolate
This macro will cast Immolate on all targets within range of you target. Keep in mind it will use 1 burning ember.

/cast Incinerate
This macro will cast AoE incinerate on all targets within range of your target. This also uses a burning ember, however, if you use with this on more than 4 or 5 targets, it can actually generate another ember, due to incinerate hitting so many targets. This is totally spammable during a high AoE fight. Your DPS should be higher than everyone elses if used at the correct time.

So the ? of mine would be are you saying to use Dark soul before chaos bolt? Dark Soul raises crit chance by 30% and chaos bolt is an auto crit spell. I dont see it.

Chaos bolt damage is increased with crit %. So since darksoul grants 30% crit chance, thats 30% increased Chaos bolt damage.
