If you're trying to fly in Kalimdor or Eastern Kingdoms you will also need an additional flight licence. The default level 60 flight licence only allows flight in Outland.

Some things you can try-
1- relog-reboot
2- if your mount icon is on your hot bar remove it and drag a fresh one there
3- i think 60 flight works in outlands only, if you want to fly in vanilla wow you have to buy another flight skill on top of what you already bought.
4- turn off all addons, one could be bugging you
5- if all this fails, petition a GM.

If you don't have the Cataclysm upgrade on your account, you can't fly in Eastern Kingdoms/Kalimdor.

did you learn
Flight Master's License
also? without it you cant fly in azeroth.
you need a cataclysm account to buy it though.
