the wowhead client doesnt do it, it tracks quest through the armory and that a bit of an unreliable quest tracking source.
if you intend doing loremaster or just low level quest for fun i suggest using the
quest completist
addon. just make sure your read the description/guide on how too have it track everything including stuff you already did and you should be set too carry on in your questing path.

Even Quest Completist will have that shortcoming on certain quests, though - or is the ingame query of completed quests more reliable?

there ofcourse might be some quest that arent correctly checked, but i just havent encounted any and i did over 4k quest after i had installed it. so im comfortable too say its really reliable.

QuestCompletist and a few others (including the wowhead list), do not keep in mind that quests prevent each other from being accepted or completed, breadcrumb quests may be gone for accepting once you did the quest they lead to.
Grail&Wholly try to research and display these kind of relations to make a more precise list of quests you can still accept and miss.
