It depends what you like, honestly.
I find I don't care much for melee DPS. Thus I find warrior, rogue, Death Knight, Ret Pally, Cat durid and enhance shaman not terribly fun. If you like it, you'll probably have a blast with any of these. Kitties and Rogues both rely on combo point style resources, and sneaky-sneaky ways. DK/Pally/Warrior rely on big shiny 2 handed weapons, generally, and smack stuff around.
I do enjoy range DPS. I like my hunter because it's kind of fun to go out and tame different pets, see what they do, or make a "look" with transmog that is fun and unusual.
I don't have much experience with Warlock, I find managing all the DOTs and cooldowns just aggravates me.
Boomkin is different from other casters, I think. You have the solar/lunar resource and you change which spells you use based on which phase you are in.
Shaman has a lot of cool looking spells like chain lightning that bounces all over the place. I mainly play my shammy resto though, so the DPS rotation isn't fresh in my mind.
I'd suggest reading over the forums for the classes that sound the most interesting to you, see if that helps narrow it down. Then, level one of them up to ten or twenty. If you're not having fun by that point, you probably won't. Try the next one on the list. It doesn't take long at all to get to level twenty with heirlooms and random dungeon finder. Plus questing has been streamlined to make leveling smooth and seamless, no more:
"Here, take this item to the other side of the world for me. Kthanks."
"Oh wow, you brought me an item! Here, take this back to the other side of the world now. Bye!"

you always got dibs bows/guns/crossbows (especially in MoP).
you got awesome beast as pets (even more rare and awesome pets as BM).
you can roll need on anything and proclaim its hunter loot and everyone is cool with it (joke).
you can ninja pull an entire group and blame someone else cause they got aggro through
Misdirection

you're able stealth
(in MoP glyph for it
).
you're able too escape most deadly situations with
Feign Death
and enjoy seeing your guildies perish around you.

It depends on what you enjoy playing, but personally being an elemental shaman has always been really fun for me, even in pvp (thunderstorming someone off the edge).. You can always try them and see what you like the best

BTW, they buffed threat output for tanks so you really don't have to worry about that as DPS if your tank has a few working brain cells.

I don't think you can really go wrong except for Arcane Mage. Honestly, during Wrath, I fell asleep in my seat as an Arcane Mage. I vowed never again regardless of the DPS loss. Fire is a bit more flashy, but it's still fairly boring.
I personally find that Assassination Rogues are really fun. The spec is very engaging, and the class itself has so much utility that you can do so much to help your healers while pumping out a good amount of damage. You're never just standing around bored. And the rotation isn't something crazy that you'll rip out your hair trying to figure things out.

Paladin is mosterest funererer.
They have the most buttons to hit and 1 button missed causes 20% dps fail.
It's really only fun if you like challenges when you DPS. Played correctly a fully reg DS geared paladin can pull 40k on a standstill fight such as Ultraxion and burst 60-70k during cooldowns.

I'm gonna agree with the above. I LOVE my ret pally. Mostly because of the healing and damage mitigation that makes solo leveling or solo anything a lot easier. To me, the ret pally is very self-sufficient, rarely having to rely on others for help except perhaps in current tier dungeons/raids/world bosses.
