I don't understand why people tend to play at realm with inequal ratio and choose faction that's being dominated.

Engineering is highly recommended for PvP. For a second profession right now, BS is popular. LW is a decent choice. This is speaking for right now though and by the time you get to 85, these may change.
The reason Engineer is perfered is because of the spings to the hands give a 8 sec buff i believe for 480 of either strength, intellect, agility - stat chosen by whichever you have the most of.
BS is popular because the two extra sockets you get with BS, with epic gems = 100 of a major stat. Other professions only offer 87 on a major stat and if you had all epic gems, JC only gives you something like 47.

He's at server with low population so he won't sell much. Choose LW and Skinning and hunt animals, that's it.

I dunno, people might still buy *some* things. And the money he makes from those will get him at least his flyers; from experience, I know it can be hard to afford your mounts without much to stick in the AH!

I am on a low population realm and the low lvl mats actually do sell really well and can be charged for a very hefty amount since not many people farm it and some max level characters wish to power level their professions.
Mining at low lvls is > Herbalism for AH gold
Skinning is decent also for the AH.
If money was an objective for you, Mining + Skinning is the way to go. But end-game maximizing your character for PvP is usually Engineering and Blacksmithing.
Judging though that he has a full character slot on another realm I think he knows how to make gold.
