Being a participant of the beta and having some knowledge of what's there so far, let me shed some light as to what some of these models are.
What you guys are referring to as an "earthen gnome" is, in fact, a Pygmy. There is a tribe of Pygmies on the Lost Isles (where the Goblins end up after fleeing Kezan), and they use variations on this model.
The "strange elemental type thing" is an example of the new type of elementals--"bound" elementals. Recall how in Wrath we encountered elementals called Revenants--this is somewhat like that. Many of the new elementals in-game are flagged as placeholders for these bound elementals. The one on this page appears to be the bound wind elemental. They are a work in progress, but there will probably be a bound version of the existing elements (I've seen PH bound fire elementals, etc)
The murloc is, indeed, a deep-sea murloc. They're in Vashj'ir.
I've only identified things that I've experienced firsthand in the beta so far. Now for some speculation.
The camel appears to be planned to be a mount--I've done some poking around with a Cata model viewer and there's a version of the camel with a saddle (but the saddle itself has no texture).
The giant-headed raptor is probably a pet reward for the not-yet-implemented Archaeology profession.
