Because it's not fair PvP. There's absolutely nothing rewarding from killing low levels, people with low HP, AFK players, etc. If you enjoy bashing on players like that, might as well play a Hack and Slash, you might have more fun.
Maybe you'd get better if you didn't waste your time doing this.

I don't see the fun in killing people that many levels below me. It basically sends the message: look at me. I can't kill people my own level so I am killing people 50 levels below me.

Says you? You rolled on a pvp server deal with it, you cant speak for the hundreds of people that do it, if you say that -->pve realm that way. Lol How many people actually cared when they ganked me at level 42 and said the same as you?
I'm not talking about myself, I have no problems with being ganked considering most people playing this game are horrible, they end up dying anyway. There's just nothing rewarding from killing low level players, therefore no fun.
From my experience, most of people who do that are not good at all and they want to feel good by dominating people they cannot lose to. A bit like good ol' twinks, I tried a level 19 hunter back in TBC, it's fun for one hour then you really don't understand how people can play so many days against terrible players.
Honestly, stop wasting your time and try to get better at this game, so the general skill level of this game gets higher. You're going to enjoy this a lot more than killing the level 20 in Redridge Mountain if you actually like PvP.

People choose servers mostly because friends of them play on the same server.
The wow lore doesnt make aliance or horde kill on sight. You are supposed to be in a treaty.
Killing low level players for fun has no rivalry. You win nothing. Shows only that you have a small winky.
