Jewelcrafting is nice, but I wouldn't personally take up Tailoring as a Rogue. Leatherworking on the other hand provides an AP enchant to your wrists, cheaper leg enchants, and gives you the opportunity to make your own gear which often includes BiS stuff (such as the current
Footpads of Impending Death
which are close to if not the best current boots for Assassination Rogues). Hell, to go with Jewelcrafting even Blacksmithing might be a better choice so you can place your new gems into the extra sockets it gives you.
The 400AP off the cloak enchant might seem like a lot, but since it's a proc with an ICD the actual amount of benefit you get out of it averages out in line with the personal buffs the other professions grant.
But that's just my personal reasoning, and to each his own I suppose.

. Depending on what content you're doing though (hardcore raids, or casual raids/5-mans), alchemy can always be a big bonus due to double flask durations - that's alot of money saved!

The other downside to Tailoring is that you're having to sacrifice another enchant for the proc. I've got JC/BS on my rogue, since Engineering's value is only good if you can keep track of all the cooldowns and use them all on cooldown.

Why isn't tailoring on that list?
400 AP for 15s every 60s 25% uptime = avg +100ap
Then - the EP of whichever other cloak enchant you're using.
100 EP is good, but it depends on the EP of the enchant you're replacing..

The difference is about 50-55 EP. That's well below the other professions.
