If you're running 5 heals, I'd go with 1 of each - disc priest, holy priest, resto druid, resto shaman, and holy pally. Most fights are 2 tanks, or the 3rd tank doesn't take much. Beacon allows you to keep the 3rd tank up real well if need be. This gives you an even spread.
To answer your question - yes, 2 paladins can heal 3 tanks - because 1 paladin can heal 2 tanks. In general, though, I am the only holy pally in my guild's runs, and I do 1 tank + raid so I can help out on the other tanks should something happen (e.g. that tank's healer gets bone spiked).

While Paladins dont have AoE heals, we are still powerful raid healers. Nobody else can put as much healing on a tank at the same time as we spot-heal those who are low on health. In 10-mans, think of a paladin-druid combo for healing. The druid blankets hots and keeps the raid buffered, while the paladin keeps the tank alive and snipes those who are lowest on health. This means the druid can keep using high HPCT abilities and let the paladin worry about burst heals.

I personally prefer Pally + Priest (holy) for 10-mans, if running with two healers. Holy Priests have more bursty raid heals over Resto Druids (and Priests can still buffer the raid with renew), which makes them a more viable choice when running with only one raid healer. Sure, Resto Druids are nice to buffer the raid, but it's not as beneficial when someone else isn't there to finish the job, persay.
I'll always say that, for the most part, your healing foundation is two Paladins. My guild only runs with one (argh), and the problems are clear at moments on tank-healing heavy fights like LK, and Anub'arak in ToGC. However, it's hard to figure which raid healer to drop, and it's honestly dependent on the fight. For instance, it'd be rough not having a Disc Priest for FC in ToGC25, but not so rough to be missing one on Beasts. You're better off just sucking it up and running with 6 healers (imo) - pally/pally/druid/shaman/disc/holy. One pally is definitely
do-able
(my guild does it), but not preferred. If your DPS is
that
bad that you're considering dropping a healer because of it, you just need to look at recruiting some new DPS, honestly.
