Cata Professions... ever learning...

Crucify this idea! As it stands now getting epics is part of progression. So why not allow professions learn to craft SIMILAR items to weapons that have dropped from previous bosses. Same iLevel as a boss 1 or 2 tiers below the current raid. But only allow the crafters who have fulfilled that tier level. And let it include weapons, but exclude heroic like stats.
So now that we are on lvl 264 25's, crafters would learn (by discovery perhaps) lvl 245 type items.

But end game Cata ilevels will be even higher.

I know, this was an example based off our current ilevels. As we go into Cata, the craftable items would start around ilevel 264 and will progress from there.

I think what the OP meant is this:
If a piece of gear drops off a boss, allow an appropriate crafter to learn an appropriate piece of an ilvl 2 tiers below. So if a weapon drops in ToC 10, a BS would learn an ilvl 200 weapon recipe. If a leather or mail helm drops in ICC 25H, the LW would learn an ilvl 232 helm recipe.
The problems I see with this, and I'm using current ilvls because we know what those would be (this is only an example). Naxx 25 progression going "2 tiers down" would basically be level 80 non-heroics (e.g. ilvl 187 blues) which a lot can be made by crafters already anyway. Also, you generally are able to learn professions for the highest tier (excluding heroics), just not for every slot. Plus, Blizzard makes it worth it for people to go randoms, which mean spending thousands of gold on crafted gear is null and void once you've spent a week getting Emblem of Triumph.
In Cata, Bliz is going to make levelling professions easier. So curbing the expense at the cap isn't as necessary.

I agree Skribs, I guess this comes from frustration of being a casual player who pugs 25's and from Ony until have only been lucky enough to get a 232 weapon from H HoR. (Feral druid and Hunter).
But again, I agree with your post.

Those already exist in game, but they were BC creations for Armour/Weapon smiths.

Actually, there's also the three Leatherworking specs, the Three Tailoring specs out there as well.
