My fiance and I are torn, so I figure I ask the people who know best. We are trying to decide which to do as our group.
Do you think an Affliction Warlock / Demon Warlock would be better?
Or an Affliction Warlock / Shadow Priest?
Both have advantages and we really aren't sure which would be better off. She is up for playing the Demon Warlock or the Shadow Priest so we can't even use a personal preference to decide, she loves both classes, so she just wants to know which would be nastier at this point.

Sorry about that. Yes, starting from level 1 and leveling together. And I'm doing the affliction lock no matter what sama, it's my fiance that can't decide between the priest and lock. She wants to play both, and HAS both as solo chars, but wasn't sure which to group with me as a re-start from the ground up since she likes both.
And thanks Sentenia :)

Since you're asking in a forum where we may not entirely be objective, I might recommend that she consider a Warlock. You could both have soulstones on yourselves then. After all, Warlocks rock. But then, there are certain great benefits (like I pointed to, above) from mixing and matching various classes together. You can shore up each others' weaknesses, and improve your collective capabilities via your individual strengths.
The great thing about having a healer with you -- ANY healer -- is that they can feed you free mana (HP, which you can Life Tap into Mana Points) as you are burning things down, in between their own damage. You can even do Demonology and Destruction (Destro, after level 60-64), which have a harder time regenerating their own HP than Affliction, and have greater uptime. You can also keep your soulstone on your Fiance, so when the two of you get mowed over, she can pop up and then resurrect yourself.
Your Fiance as a Priest could cast Levitate on you, and you could cast Unending Breath on her. Levitate would also allow you to navigate water, but it wears off if you take damage. Unending Breath (with the corresponding minor glyph), will grant you the ability to stay underwater for extended periods of time (as in PvP), and to go 20% faster while in the water. You could even utilize BOTH buffs, so that UB could back up Levitate, if you take a hit. And this is just one possible example. Power Word: Fortitude would also be a boon to you as a Warlock, because you would have a much larger HP pool to draw mana from, and to survive an attack. Pair that up with an Imp's Blood Pact buff, and you will both survive situations you might not, otherwise.
My wife is a Paladin, and so she both tanked our way through various zones as we leveled through 80, and healed me to keep my damage going. Ultimately? My answer is that your Fiance ought to play what she feels most like playing. You will find numerous ways to make it benefit the both of you.
.
EDIT: One other thing worth thinking about?
Gear
. If she rolls another cloth-wearer (a Warlock, Priest or Mage), then you will constantly be in competition with one another for the same, dropped gear in dungeons. If she chooses a class which wears leather/chain (Druid, Shaman, Hunter or Rogue), or Plate (Warrioress or Paladin), then you will not have to deal with this problem. If one of you becomes a Tailor, and can craft decent cloth armor for both of you, then you may be able to mitigate some of this problem. My wife and I avoided it neatly, with her choices to be a Shaman, and then to dump that for a Paladin.
