i'm having a hard time getting def capped. it seemed almost easier on my previous acct, back before ulduar.
i'm sitting at 33k HP unbuffed, yet 519 def.

edit: yes, i know, i have 2 pieces of gear with shield stats. shhhh. it's better than what i had.

There. Is. No. Cap. On. Defense.Get socket on belt.
Get Seal of the Pantheon.
Get badge chest/belt.
Craft boots/wrists.
Ditch your Stam gems for combined def+sta if you still not uncritable.
Use WowHead profiler FFS, it will tell you everything.
EDIT: Get second profession, stop slacking. Jewelcrafting or Blacksmithing will boost your Def to the skies.

One obvious thing you can do is replace that chestpiece you're wearing. It's a nice bit of armor, it's just, you know...there is no defense on that. At all. You didn't even put a defense gem in the slot.
You may need to actually do some downgrading, if you don't have an abundance of money or easy access to a guild that's willing to help you pick up some gear. Otherwise, you may have to make nice nice with the
dragons again until you can get something from heroic
Pit of Saron.
I'm assuming you're also asking for equipment that's not tier gear, yes? Your wrists could be replaced with Tempered Saronite Bracers or Bracers of the Herald (crafted and from heroic Ahn'kahet), the cloak could be the one from heroic Nexus, the ugly (very, very ugly) one from Wyrmrest, or the one from Halls of Reflection, your belt could use a defense gem, the pants from Forge of Souls, and the 213 ring from vendors.
As far as for the money you spent on stamina gems, the fact of the matter is that when you're gearing up, you probably shouldn't be spending that much money on epic gems to enchant gear that you're not going to be using for too long. It's usually not a good idea to just grossly prioritize one stat like that. It's easier with higher level gear, because that kind of gear already has a lot of the stats tanks need to reach respective caps and limits. But without that, you end up, well...unbalanced.
Good luck, and don't be afraid to use something of a lower item level or even blue until you actually reach your goal.
