Unholy DKs benefit a lot more from Str than Armpen (even more than Blood DKs). For alot of reasons.
Ghoul and Gargoyle gets more Atkpower.
Diseases, Death and Decay and Death Coil hits harder.
Armor penetration does not contribute to any of those listed above. Yes SS, Melee and BS will hit harder, at the cost of those other points. It is nice to have armor penetration on gears, but not enough to gem for it. What I'm tryin to say is, definetly pick up gears that have armor penetration, but DONT gem for it.

stack str and you cant loose. by stacking arp your only gaining arp. by stacking str your gaining attack power, arp, and many other benifits.

No...By stacking Str, you are only affecting your AP. However, ALL of your abilities are affected by this, including Ghoul and Gargoyle damage output. You don't gain ArP by gemming Str.

By how much exactly is arpen inferior to strength? Because there's a lot of cases where ret paladins take rogue leather over plate items just to avoid the ridiculous amounts of haste and arpen on plate nowadays, both of which are pretty useless to ret. I assume since DK DPS specs are all less magic-oriented, though, that this isn't worth doing for death knights? I ask because my death knight is now finally approaching 80 and I want to know if I should be begging groups not to shard leather.

There's plenty of ArP on Plate and it is good for all specs (Frost wants crit more, but they can handle ArP as well). Warriors have been taking Agi/ArP items because they tend to benefit more the crit and ArP than their current Plate piece in that slot. Ret Paladins have been taking Agi to obtain more crit (however, they tend to avoid ArP leather).
At the very upper echelons of gear, ArP is supposed to surpass Str slightly, but you lose a significant amount of DPS from all other sources versus increasing strikes and white melee that many have ruled it a net loss to gem for ArP, even at those gear levels.
Time will tell, though, since no one in the world is completely stacked in Heroic 277 gear yet.

So for my alt in a guild not doing 25 man heroic ICC I'm hearing don't get leather gear to avoid certain stats on plate. So much easier than Retribution, thankfully.

this is the stat weighting for str and arp. taken from
here
strength is weighted better and you will get alot more dps out of str overall...for aoe and single target, so gemming for str is recommended. However, when selecting gear...this is the priority list you want to follow.
Basically:
T8/T9 Content: Hit > Strength > Crit Rating > ArP >= Expertise > Haste > Agility
T10 Content: Hit > Strength > ArP > Crit > Haste > Expertise > Agility
i myself like to get my expertise near cap so i prioritize it alittle higher but those are the numbers to follow.
