When do you have "too much" defense?

The moar defense the better. 540 is absolutely required. Anything over 540 is good. Definetly better than any other yellow-socket stat.
There is nothing like "too much defense".

I thought defense has diminishing returns after the cap?
If you really have that much, it seems like you could just replace the enchant on your sword to something like Swordshattering. The defense is no loss, and I think 4% parry is better than 2% stamina.

Max hard cap is 575 which my DK has (in sig).
You cant get any higher than that, If you are complete waste. No D gems or enchants (switch them out)
Nope, defense past 575 still has benefits, especially with the recently buffed IFB. With 600 defense, you would have around a 65% damage cooldown.

Ok but just having more stamina or dodge is going to benefit you more than a CD that you can use every 2 minutes. Unless your under the def cap, you really shouldn't gem defense at all. Stamina and one red gem to activate your meta

if your going over 575 and you have SSG on then you should switch to sword shattering. i know the defense skill is not subject to DR's however the amount of parry/dodge/miss you get per skill point is subject to DR's. whereas the 4% parry isn't subject to any DR.
since ICC came out alot of tanks have switched but i guess it's more based on your gear. just think about it this way. the buff to frost presence covers the 2%stam you lose by switching to 4% parry. pre the last patch your hp would be the same but you'd gain some avoidance =P

+Def/Stam gems are probably the best bet for a yellow socket if you're keen on the socket bonus.
Hit/Stam is good if you're suffering. But those two are the only ones I'd consider for a yellow socket, and only if the bonus was 9+ stam

SSG's 3% avoidance is added after DR calculations, so it's always 3%. Unless you specifically are taking advantage of the disarm reduction, SSG is the superior tank enchant.

Nope, Rune of Stoneskin Gargoyle gives you 25 defense skill and 2% Stamina, BOTH SG AND SWORDSHATTERING ARE NOT EFFECTED BY DIMINISHING RETURNS.
So the comparison is 4% parry to 3% (dodge,parry,miss) dodge + 2% stamina. So if you had 575, you really have 550 defense with regard to stats getting weaker.
1% avoidance or 2% more stamina, so that is very nice and why all of the DK tops in top 50 guilds (all have one) use SG.
