Does it really come down to regen?

Looking at gear upgrades available to me, there are a lot of situations where there are two nearly identical pieces of gear, the only difference being spirit instead of haste on most occasions. For instance, I could use the crafted spirit boots, or I could use the plague scientist boots from festergut, the only difference being 80 spirit on the former and 80 haste on the latter, and socket differences. The same holds true with belts: I could use the badge haste/spirit belt, or marrowgar 25's haste/crit belt. Pretty sure I could do the same thing with my pants too if I wanted to break my bonus, or the wand, if I can get rotface 25's wand as opposed to the spirit/crit wand.
My question is, given an equal amount of haste as opposed to spirit, or an equal amount of crit as opposed to spirit, in either scenario is it worth NOT getting the spirit piece? Or, as the title of this post asks, does it really just depend on regen, even despite spirit providing extra spellpower?
This is based on holy spec.

Spirit is great for regen, mediocre for throughput as Holy Spec. Regen is only good until you don't need it anymore. Basically, until you find yourself being able to go through a long healing intense boss fight without going OOM, you should concentrate on throughput stats like Haste (ESPECIALLY haste if you're Holy).
If you're at this point already, just start dropping regen items for throughput items until you start feeling the pinch for lack of regen. Are you already over the 20% benchmark for haste?

With +5% crit talented I'm at 21% of both haste and holy crit. I use my fiend on cooldown but try to be smart with it, like popping it right before heroism. Taking festergut for an example, I'll usually dip down below 30% mana, pop fiend for the heroism, and end the fight nearly 100% mana. Actually, I can't think of hardly any non-hard mode fight where I don't end 75%+ mana, with my overall healing and overhealing remaining competitive to the other healers. Take away replenishment though, or togc10 2-healed or togc25 and I might have to burn a potion.
The question now then I guess is, how much spirit can I lose? Right now I'm looking to lose about 160 spirit for 80 crit and 80 haste.

Given what you're telling me, I'm willing to bet that you can nix that spirit and gain tons of throughput and still have no real problems with mana. Pop your fiend a little earlier and you'll probably be perfectly fine. You should ideally hit 0 mana at the exact moment the fight ends if you're properly geared, that would mean you have EXACTLY the perfect amount of mana and mana regen for that fight. Anything beyond that detracts from your throughput and can be sacrificed without hurting you.

The simple answer to the original question is: Yes. It really does come down to regen.
Your regen allows your mana pool to last longer but what is the point of having 6-8k mana at the end of a progression boss fight left, there is none, all that mana is effectively wasted healing. Likewise you are a useless as a healer if you run out of mana with all your CD's popped and the boss still has 50% life left.
Once your regen is at what you feel is adequate to get you through progression ( for your guild/raid grp) with a little leeway for fail dps standing in fire too long, then anymore regen is wasted and effectively worth as much as hit rating imho. It is at this point you want to gem 23 or 12sp/10haste gems in your gear.

Some fights take a great deal more than others, so personally I think if I finished a fight with ~25% mana, I'd be at perfect regen. That's just my opinioin though.
I feel the need for that extra cushion.
Well, of course, I was referring to a healing intensive fight. I finish Archavon at like 95% mana remaining.
