You can pick up Tuskarr's vitality to somewhat offset the loss of PoJ. If you think about it, it's one talent point for 3.5% run speed, and you spend two talent points that way. You also get a lot of nice things to offset the loss of crit, most directly the 11% bonus healing (or 5% with a protection paladin or a tree, which admittedly almost any raid has).
As for the mail helmet versus the plate one: Unless your gear is seriously out of balance, it's haste versus crit and haste is a lot better for holy paladins. Those weightings are kind of weird though. Mp5 is not equal to int and crit is definitely not worth nothing.

Haste / MP5 items are the best itemization for a Holy Paladin. It pretty much works like this:
1) Haste / MP5
2) Haste / Crit (to 676 haste)
3) Crit / MP5
4) Haste / Crit (over 676 haste)
So yes, of course the mail helm from Triumph badges is the best choice. Don't let lower armor types disuade you.
With the nerf to Divine Guardian, a 51/0/20 spec is now more viable than it used to be. However, 51/17 + 3 is still extremely good, and something you should consider for when you get to end-game raiding.
However, some math on 8% crit: using 25 HLPM, 10 FoLPM, and 2 HSPM, 1 itemization point of crit is worth 0.2 MP5. Since 1% crit is roughly 46 crit rating, 1% crit is roughly 9.2 MP5, and 8% crit is roughly 73.6 MP5.
Divine Guardian increases the duration of your Sacred Shield by 30 seconds. So, in a 6 minute fight, you'll only have to use Sacred Shield 6 times, instead of 12 times. Sacred Shield is 12% of base mana, or 527.28 mana, which equates to ~3164 mana saved over the 6 minute fight, or 44 MP5.
Retribution also grants you 10% Benediction, whereas a 51/17 + 3 spec can only give you 6% Benediction.
So, basically, Retribution is better for mana regen, and Protection is better for raid utility. Plus, your Sacred Shield is buffed, which is nice.

Blizzard's itemization isn't always that great. Case in point: Retribution Rogues.
If you're worried about RF pulling aggro, it seriously, seriously won't on tank and spank fights. I tend to go from ~3% aggro on heroic bosses to ~6% with RF on. BFD. You do, however, have to be careful if adds are spawning all over the place. They'll all go straight to you if your tanks aren't quick about running around and grabbing them.
Although, I never thought of this, but in adds fights you could use this to your advantage by just standing on the offtank. Everything would come straight to him, no adds running wild.
And you aren't mostly going to be taking magic damage. You'll only be taking magic damage, unless you decide to start tanking.

5% healing is actually the least desirable talent in the Protection tree for healing, simply because the amount of overheal for a Holy Paladin is massive. The only time that the talent is good is if you're stacking SP and using a FoL / HS base. Other than that, you just get it because you have to.

Not entirely true...
Remember that when you switch to FoL from your high HL burst heal phase to conserve mana... this +5% healing helps a TON!
