Aside from the expertise and to a lesser extent hit rating the other stats are of relatively similar usefulness to us.
Haste means faster white hits and mauls, faster white hits means faster rage gen from white hits, faster mauls means faster threat gen from mauls, faster white hits and mauls also means more OoC procs and damage from white hits and mauls within a given timeframe.
Crit means more damage which means more threat and more SD uptime (though it's not hard keeping it up every GCD anyway)
ArP means more damage from swipe, maul, mangle, and white hits which translates into more threat but does scale linearly.
In a nutshell crit offers the most survivability via SD uptime, ArP offers the most aoe dps/threat by benefiting most of our arsenal, and haste benefits our rage and single target dps/threat but all of these are very small gains and not our primary concern.
All 3 are relatively small gains so much so that just as you said, "It doesn't really matter."
- When shopping for leather pretend you're a stamina loving rogue.
- When shopping for a weapon pretend you're a one-armed stamina loving hunter who lacks the upper body strength to lift a big axe.
- When shopping for jewelry, a cloak, and trinkets pretend you're a parry hating warrior, paladin, or death knight.
Here is what I see as BiS from currently known gear. (The neck will most likely offer 6 stamina which is comparable to the 8 agility from the head, I'm just not a fan of RNG nor it of me and will add an extra inch to your epeen when you pop SI)
