First of all, this topic was a little creepy for me, because it sounds like I wrote it...
I ran into
exactly
the same problem once I hit 80. My friends and I wanted to join a guild to do raids. But, we didn't like how the hardcore raiding guilds were run. Too much gear, not enough fun. But, we didn't really like how the softer, casual guilds were run either. There's a difference between understanding that this is just, well, a game, and completely not caring about the game in general. But, eventually, we just started our own guild. We haven't begun recruiting, yet. But, I'm not in a rush :) We are still open to joining a different guild, though. But one has not surfaced as of yet :(
So TL;DR version: If you can't seem to find a good guild, and you think you can handle it, create your own! If not, I really do hope you find one that suits your tastes. Try to look for 'family-friendly' guilds. Those ones seem to have the most mature players, in my experience. :)

After faction changing my druid to Horde, I was guildless for quite a while at 80. Here are some tips I picked up while lurking in trade chat.
1.) Is the person who's advertising 80? (Kind of only applies to raiding guilds)
2.) Are they using good grammar?
3.) Is the ad spamming trade chat?
4.) Do they have Vent? (Not that important unless they're a raiding guild)
5.) Do they have an awesome tabard?
If you just keep looking, eventually you will find the perfect guild!

My priority is what time their raids start at. A lot of guilds on my realm start at 7pm server time, which is 6pm local, and that's when I'm literally just leaving work.
This is how I determine as well, right now I have put aside my 80 hunter/paladin/DK and focused on leveling a shaman and making its main spec resto at 80, well the server im on (winterhoof) doesnt have that many late night guilds raiding at night, im looking to start raiding at around 10pm or even 11pm est. This is basically gonna make me switch servers probably and thats fine with me will probably seek out a server based on PST, so thats one main thing to look for if you wanna raid, and I think finding one that does stuff that you know is a good time for you is most important.

I agree that some trial and error is usually what it takes. Sometimes you get an invite to what you think is going to be a really good guild and things just don't click. On the otherhand...you might jump in to a guild just for the heck of it and it ends up feeling just right. I personally look for a guild that is actually ran by the GM and officers and has some order and people in the guild take things seriously. By that I mean they are concerned about how members act, there is some progression, people are friendly and helpful, and an active gchat/vent is really nice too. I hate the guilds (being in them I mean) that are just a handful of people that are wearing the same tabard and nothing more.
