A couple ToGC10 questions

I got the Tribute to Madness achievement on my resto druid, but now I'm going to actually lead a group on my mage.
I've never actually been the leader of my own ToGC10, so I've got a couple questions.
Northrend Beasts:
For northrend beasts, how many stacks of the dot should the tanks take before taunting? Both the tanks are over 40k+ unbuffed. One is a paladin, the other is a druid.
I understand the paladin can bubble off his stacks, but I'm unsure of when he should do that, and how many they should maintain during the encounter. We have 3 healers for the northrend encounter: resto shaman, holy priest, holy pally.
Anub'Arak:
We're likely going to 2 heal this with the holy pally and holy priest (or shaman?). Not sure which would be better. We have very solid dps in the raid. I'm confident everyone will at least be 5.5k+, considering our dps, what would be the best strat for us? How should I take care of the ice? I've seen a lot of videos with raids not even tanking Anub on the ice patch, but when I did this place on HM with my resto druid, we always had him on ice.
We have 6 patches in the HM, use one at the beginning for adds, nuke the first set of adds. Anub submerges. Drop one ice patch north, 2 south. First target destroys south, second target stands at North and waits for BoP, and last target runs south again? The add patch will remain in the middle. Anub emerges. Do you think we'll be able to do this with only one submerge phase? We'll have two left over if we only do one. Save blood lust for p3.
Would this strat work? Is there anything I should change up? The raid is
definitely
geared for this, I'm just trying to iron out the strats.

The first taunt/tankswitch after 2 stacks, after that the tanks taunt off of each other right after his/her debuff wears off.
