I have a level 80 rogue that has mining / herbalism and it just rocks.
I farm WG for about an hour a day and get 3-4 frost lotus..sometimes more...few stacks of Saronite and 1/2 a stack of Titanium along with stacks of herbs.
Easy stuff...and I never fight. Mob is close to a node...blind...vanish after. Less chance on getting ganked :)
Never been much for pvp and my rogue is fairly well geared but no pvp gear at all.
The only pain is having to switch back and forth between what you're searching for..which I do constantly. Its still not bad...pull them out to a bar and its just back and forth.

Honestly, if you're going just for the gathering abilities, get yourself a DK. They're stupidly easy to level, On a Pale Horse gives you the same speed bonus as Crusader Aura, and you start 55 levels ahead of any other class (that's about 1.5 days worth of /played).
For a retardedly easy leveling and grinding spec, stick with
this
. Fill out the points in blood first, and then work your way down the unholy tree. You can keep the spec at 80 for farming, since it gives you an added move speed bonus, great solo survivability, as well as a pet to deal with any mobs while you're gathering.
I started my DK as a farming toon. He's been every gathering profession at some point or another, but I've ended up dropping one of them for blacksmithing (since I actually use him as a tank now).

The only problem with having herb/mining professions is that you can only have find mineral or find herbs on one at a time. Thus unless you have really good eyes and gatherer add on it will be hard to get all the nodes closest to you.
On topic if you want to know what class, Id recommend a DK since they start at level 55, 100% mount and spec unholy for the speed boost and perma ghoul. It took me about 4 or 5 hours to get mining up from 1 to 300. I did smelt, but to get the nodes was really easy since mobs = useless and the speed is great when farming.

Someone here on the forums mentioned it...but get an add on called Spotter. It automatically switches at a time interval that you choose.
I just downloaded it a few days ago for my rogue herb/miner and WG has never been so easy. I do have to keep a close eye on the mini map...but its easy farming with the autoswitch. You can set it to turn off when you're gathering too...meaning on the ground not on a mount.
