Sure. Leather and mail gear has some juicy stats on it. Good luck explaining to a raid why a leather chestpiece should go to you over a Rogue. Melee DPS rings/trinkets/necklaces all are open game, so DPS away.
(Just check the "Include Leather/Mail" option in
http://maxdps.com/paladin/retribution.php
)
On Intellect: As a Retribution Paladin, you have access to veryvery good abilities to get your mana back. From judging, from being healed while using SoM/B, from Divine Plea, from Replenishment, from hitting a target, from an expensive item, you will never have any reason to run out of mana.
On Stamina: Raid damage happens. It will possibly happen to you in the course of every second of every fight. There's a single fight where the "I won't get hit with anything ever" applies. That's Patchwerk. Cushy health lets your healers (human beings, btw,) relax and do their job a whole lot better! However, if you just died as soon as you were hit, well that'd work too. Every fight has some sort of mechanic where you might take damage. I want you to stay alive, I really do.

Intellect is practically useless for a ret pally, if ret pallies were conscernced over int then they would spec into the holy tree to get some. I believe the stat order need for ret pallies is something like STR>HIT>EXP>AP so keep that in mind. Also, armor penetration is a hugely downrated skill, but the bosses are now equipped with much more armor than normal Pre-WotLK and some pallies can dish out more dps with at least a couple % of armor pen. However, calculations don't lie and armor pen is pretty far down on the ret scale, so do what you want. Heard about a ret pally stacking armor pen that actually did some pretty rugged damage, but I suggest not getting any, but if it's on the gear you get, you don't need to be too concerned.

its all extremely heavy on crit rate and attack power and the main stat is agility which adds again to both
Paladins don't get attack power from Agility so it doesn't add again to both for us.

Retribution paladin:
When using SoB your DPS return on 100 of each stat is as follows:
Weapon Speed 32140 (per 100 weapon speed, obviously only useful as a weighting)
Weapon DPS 537
Str 171
Hit rating 129
Exp rating 82
Crit rating 78
Agil 74
AP 68
Haste rating 45
Armor Penetration 44
SP 23
Here, this will help. It's from the Theorycrafting forums.

tho i still agree with all our special stuff pallies do need a bit of mana, if we really wanna press our dps, and throw consecrates etc, the extra mana is a godsend.
No, you really don't. Mana regeneration is worth far, far more than a slightly bigger mana pool.

Same exact thing I was thinking... I almost stopped reading his post when I read this. This guy is criticizing our itemization and stats when he doesn't even know the mechanics of the class? Blizzard buffed paladins to make them idiot proof, but apparently they didn't do a good enough job because people are still finding ways to be retarded.
One more person thats going to step into ulduar, !@#$ his pants, and quit the game because 'its too hard'.
