I dont really think your ideas are that great; Sheep is good the way it is (not making it heal the target would be way too OP). Second of all, if you'd enable mages to see people while invisible, it would be pretty strong as well, since you can essentially reset the battle by allowing you to jump on the other (i.e. casting a frostbolt at a warr from max range).
Honestly i think mage is one of the most balanced classes in PvP (frost anyway). You dó have burst, but you gotta do a little bit effort in order to do that burst (e.g. WE shatter-combo's). You háve survivability, but you gotta time it right if you want to get most out of it (Iceblock). You practically have a counter to a lot of different classes/specs with your slows, CS, stun and freezes.
I'd suggest you to look for some of Evertras' videos. (you can find em at warcraftmovies.com), and mainly "I suck at PvP" 1 and 2. They really give you a lot of help if you're struggling with mage PvP, and will help you to become a better mage. Although they are a bit outdated (made during TBC), the same PvP frost basics still apply (WE-shatter combo's, kiting, when to sheep etc).

Mages need serious love in pvp... Have you recently been shot at by an arcane mage? They do an insane amount of burst and are able to CC another target such as a healer for enough time so that they can kill their primary target. Pair them with a rogue and you have an incredibly nasty burst/CC 2s team that will dominate when played correctly.
However I will say that a mage is not nessarily for error-prone people (often like myself). They tend to die fast.
Also, how unfair would it be if you were able to polymorph a target that was at say 50%? They would be unable to do anything while you would be warming up one of your incredibly nasty spells.

once, when i was like lvl 64 or something, (this was pre Wotlk), there was a 70 well-geared mage that rode by me in terrokar forrest, saw me, sheeped me, and then proceeded to charge up a pyroblast. I just sat there and watched as he charged it up, and then, when it hit me, it one-shotted me.
that was just a side story for your enjoyment, lol... now back to the main topic..
Hehe, you waited for him to wind up a 6 second(?) cast while polymorphed as a druid? That's kinda funny if you ask me. Although, it's not like you could have done anything to save yourself.
