You're thinking in terms of 'matter'. Don't. All matter is finite (At least,I think. There is arguement against this. For the sake of discussion we will say that it is finite). Think in terms of 'concept'. The number 1 is a concept. The number 2 is a concept. There are an infinite number of conceptual numbers between the two.

To explain other things that can relate to matter. Say you have a curve... to model the area under it, you can fit one rectangle under it. Or two rectangles. Or three. Or fifty. Or five thousand. Or a million. Or a trillion. etc. etc.
You have to say "Ok the exact area under this thing is if we stick an infinite number of rectangles under this thing, then we can exactly measure the area under it."

Because innumerable amounts are finite. There's a lot of sand on the beach, but if I sucked up a certain amount per second I would eventually suck it all up.
Infinite actually have applications, innumerable just seems to be a way to say "I don't feel like counting this".

It isn't a stupid question. It's a very good one, and difficult to answer. Infinite is simply the label we put on the concept "What if there is no end?". Actually, we cannot prove to you any case of infinite. Even my idea of 1 to 2 is not proveable as infinite. It is as difficult a concept to prove as 'nothing'. We cannot show nothingness. We can show absences, and persences, but not infinite, and not nothing.
