Yup, I had to fight three of em (Not at once, thank goodness) Without any cover. My normal strategy is equip my shuriken, throw, run behind wall, throw, run, throw, till its dead. Takes a while, but I don't die. One beholder I fought in a dungeon hit me for 205 hp. I have 110 max. I was at -192 after that.

Damaging their big eye does nothing, really. Its their little eye stalks that *!@#ing hurt.

Heh, well if you hit the big eye, it makes them close the other ones in pain, and you can sprint past lol.

I need to kill them to get to the next part of the dungeon.
Also:
(Combat): You are hit by beholder's finger of death.
(Combat): This can slay any one living creature. The target makes a fortitude save, if they fail they die. If they succeed, they instead take 3d6 points of damage, +1 per caster level (maximum of +25).
(Combat): You attempt to save versus finger of death. You roll a 1 : save failure!
(Combat): You were killed by Beholder.
Worst time to roll a 1. Ever.
