My answers:
1) Spirit is important as shadow because your spirit tap will allow you to keep going without drinking. Intell is absolutely important as well, but you shouldn't neglect one or the other.
2) Crit is crit. spell or melee or ranged. If you skin and get more crit, it will help you.
3) The best start zone for horde is probably the Blood Elf zone because it was made post-bc and really has the best gear, but honestly it doesn't matter because you won't be spending too much time in your start zones.
4) get a mouse. or get really good at touchpad

Even still level 1-20 at this point is like 2-3 days worth of work for even a casual player and the items you'll be burning through so fast it won't make a significant difference. For example, I now know at least 3 or 4 players who have leveled up toons from 1-60 in under a week. You can do it, quest helper (addon) will be a large help too. Again, start zones don't make any SERIOUS difference except for rep, scenery, and preference.
