General rule dictates that I check race, then class.
Race:
Human - Usually I kill them, they tend to be mean.
Dwarf - I like dwarves, They would have to start it.
Gnome - Auto-kill, They are evil reborn.
Night Elf - I don't like them to much, but if their nice i'll leave them be.
Draenei - I'm stricktly neutral to Draenei, but if your a shaman i'll take offense.
Class:
Warrior - I doubt I'll get the upper hand, so no.
Mage, Warlock - These guys are too annoying, I just ignore them
Priest - I'll leave them alone, they tend to be nice enough
Death Knight, Paladin - I don't bother them, the fight might drag on with a paladin, but I might try to kill a Death Knight.
Hunter - I always meet at least one hunter that tries to kill me everytime I go out to level, I don't like them too much.
Rogue - Stealth anywhere near me and I consider you hostile, watch it.
Shaman - I don't like opposing Shaman, I suggest staying at a distance.
Druid - I don't really care much for druids, but I leave them alone.
Also, any nice gestures let me know to leave you alone, so use them please

So I'm pretty new to WoW and to PvP servers (about 3 months so far). I'd like a little etiquette clarification:
The situation: I'm wandering around. I see someone of the opposite faction fighting a mob. They're facing me (so they should be able to see me coming). They're around equal lvl to me (lets say +- 1 lvl). they're not seriously injured. Is it rude to attack?
If it is rude, how much time should I give them to recover? A few seconds? let them finish the mob so they only have to fight me? Let me know because I want to have fun, but I don't want to act out of bounds either.
Rude? not at all. If it's red and gives me honor, it's dead. On a PvP server you're supposed to watch your back and your step for danger, failing to do so and/or failing to act against said danger is one's own fault. Just like irl, there's nothing fair about war (I believe that Normal servers represent the two factions becoming more-or-less neutral towards eachother, while this didn't happen on PvP servers), so it's your call to decide what you kill and what you don't kill. I'm fine with getting ganked by lvl 80s and such, although I wouldn't do it myself and am annoyed by corpse camping, I tend to just go and make a sandwich or something if I do get corpse camped, which is rare.
My recommendation to you would be to attack anything in sight, but don't corpse camp players that stand no chance against you (ie. players whos level is grey to you; people who just ressed don't count, they will also be attacked on sight). If people don't want PvP they shouldn't have rolled on a PvP server, that's my motto. But as I have said, the one and only exception to this is to corpse camp grey-level players.
Also stay the hell away from Paladins. That is my advice to you as a Warrior. You cannot do more harm than a mild fart against Paladins.

But back to the topic at hand, first things first: I'm on a PvP server because that's where all my friends are. I preferred the more relaxing atmosphere of the PvE simply because it let me do what let me have fun: make levels to make the cash to get in the raids to unravel the lore.
But in the end it's a judgement call, really. There's no right and wrong in the game, because it's just that: a
game
. But as far as me, myself, personally? My goal in the game is to get to 80 and get to the end game stuff as fast as I can, and to that end, I do what it takes to ensure that I attain that goal with relative ease. For that, I've found that having my 80 main on autofollow serves as an excellent deterrent for would-be gankers.
In most cases, I see people of the other faction and I let them alone. What's more, if I see them attempting to do a group quest that I think they'll get soundly thrashed on, I'll lend aid.

its not like the police will come and take you to stormwind keep or undercity sewers if you ganked some lowbie

As the horde on my server are finding out. If you attack my warlock with a toon that's a skull to him, I get on my main and smash your face in.
If you beat me without being 5+ levels above me, GJ!
