Dont get me wrong, this is not a QQ thread about CoH. After healing a 25 man naxx I found that with the 6 second cool down on CoH that it has totally thrown off my grove of healing and I find myself once again PoM, renew, and flashing like I did prewrath (I played the token imp spir priest with no CoH) I have considered switching over to disc and I am trying to find out what people think about gem itemization. I am currently 5/5 Vestments with a few gems here and there... thanks ahead of time for reading and giving feedback.

Im very tempted to respec into disc and since it seems that there is definatly not as much focus on spirit and more on crit/mana pool I am wondering what you think about these gems assuming that there is 5/5 vestments of faith... I know that following gem bonus is not that important and I have seen alot of pallies who are stacking straight +16int for both mana pool and crit but I guess I dont fully understand if int would be the most viable way to get extra crit...

I didn't read your entire thread. But, you seem to be a fairly knowledgeable player. You should read through the Disc thread, it has a lot of great information.
Compare your stats with what Samo suggests for 25 man naxx, and fill in where needed.
In Disc, Int is more powerfull then it is in holy, and so is crit. I'm assuming your crit might be a little low coming from holy, that might be a good first place to work on.
Oh, and Int is better because the bigger mana pool you have, the more you regen from replenishment, and Rapture (they are both percentage based mana reeturns). Not to mention int gives crit.

If you're in 5/5, and given how much you're already thinking about stuff, you can't go wrong tbh. Yes, there are ways to min-max your performance, but until you hone your skills & playstyle to the point that min-maxing makes sense, just take it easy and be ready to learn, respec, regem, and replace some gear. It looks like you won't be making any foolish mistakes, so start experimenting and learning.
That said, you really want Insightful earthsiege for your meta. Then gem a combination of runed (red) for full spellpower, SP/int, and SP/crit. Just those. Slap a few in there, see how it feels, and be ready to learn from your own experience as much as you learn from forum threads.
Oh and your holy gear will be overflowing with spirit. Adjust your gem choices appropriately, since priests who gear up with their eyes on disc don't have much spirit. In other words, for now, you should probably lean more towards crit for your gems, but only to make up for short-term deficits in your gear. When you get gear with more crit on it you can rethink your gem choices.

Yea my gear right now is super spirit heavy since I have rolled holy through all new content and I plan on working my way towards more int/crit based mostly through gemming now. Whats a few hundred gold anyways :) Thanks for the suggestions....

you should basically gem for spellpower and int. when you reach a soft cap of around 2100 spellpower and 21k Int (very easy to obtain) you can change the Int gems to Crit ones. i wouldn't bother with T7 set as its pretty worthless. you will find the shadow version of most things better.
Red gems - Runed Scarlet Ruby
Yellow Gems - Smooth Autumns, Brilliant Autumns.
Blue - non that benefit us.
I have jewel crafting as one of my professions giving me prismatic gems therefor i can easily reach socket bonuses on items if needed. but usually they have spirit or Mp5. really not worth the hassle of a hybrid gem.

Red:
Runed Scarlet Ruby
Yellow:
Brilliant Autumn's Glow
However, if your gear is good enough, you can replace with
Smooth Autumn's Glow
or
Potent Monarch Topaz
(I havent been below 60% mana in ages).
Blue:
Either Lustrous Sky Sapphire
if you need the mana
or
Royal Twilight Opal
Meta Gem is a toughie. It depends alot on what you need.
If you need mana
Insightful Earthsiege Diamond
Also if you need mana
Beaming Earthsiege Diamond
. It supplies 500 mana at 25k mana pool. This will also increase your rapture return by a bit.
I personally will socket with
Revitalizing Skyflare Diamond
because of how well it plays with Disc's high crit.
Once you ger geared for almost pure Int instead of Spirit for regen...You get like ~60mana per tick of replenishment (every second). When you flash heal has a cast time of 1.5 sec and a cost of 625 mana (373-457 with rapture). Replenishment
alone
will give you ~
150 mana
in the time it takes to cast a flash heal. Throw on your MP5 from gear, and Wisdom/totems...and you can spam heals all day without a care in the world related to mana (provided of course your heals are effective). I personally, have not had ANY problems with mana as Disc and am heavily considering swapping my Int Gems for Crit to up my output.
Only you can be the judge of whether or not you need the extra int/mana regen.
Summed up...
Use mana/Int gems if you need it
else
Use Crit
