FFB - having "enough" crit

Generally I don't get crit buffs in my raids because we lack the classes to give them. We've been running Naxx for a while and while my DPS has been adequate it has not been outstanding. Prior to the latest patch our hunters had contributed a disproportionate percentage of our DPS, and with the nerf to hunters, I was bit concerned about how well Naxx would go.
Last night I had just picked up a
Cowl of Sheet Lightning
and gemmed it with a
Chaotic Skyflare Diamond
and we had a moonkin in the raid. My fire crit was 39.8% on an undebuffed target.
Apparently for the first time I crossed the crit threshold where the FFB spec really starts to work. Instead of seeing a slight DPS increase from my incremental gear improvements, that change in crit caused my DPS in pretty much every boss fight to increase by between 35% and 40%. This is with no change in rotation, spec or other buffs. Perhaps the RNG was just being very kind, but since I saw similar improvements in every fight that seems unlikely.

I got 31% with intellect buff (no molten armor) but i try to get as much crit as i can and as low haste as possible.
Why do you minimize haste? More spellcasts means more chances to crit means more damage. You should never have problems with mana with Mana Gem, 2min Evocate, and crits refunding you 25% spell-cost mana. (Master of Elements giving 30% refund but Burnout snatches 5% extra on crits.)
