Personally... I've seen next to no benefit to having an epic flying mount. Yeah, it's faster but overall I haven't been all that impressed. I mean, this is only one man's opinion but I'm just not impressed. The cost for them isn't providing us with anything other than a slight increase in speed. I still have to use the flight master's mounts when I really want to get somewhere else fast. I wish they were as fast as those.
The only cool thing, to me, about having that riding skill are the sexier epic flyers like the Netherdrakes and others. Maybe that's where they should stick the 5,000g cost.

Also remember, that in WotLK, the different areas are not linked by flight masters. e.g. You can't fly from Dragonblight to Borean Tundra. I hope they change this :(

there are plenty of connecting flight paths from one side to the other. the only place you need a flyer to get to at the moment is Icecrown

Another advantage, as you mentioned is the ability to acquire vanity mounts like netherdrakes. Personally, I have 3 toons with netherdrakes. On the surface you could say that I'm out 15kg for the epic flight, but all the money I have made from doing the Netherwing dailies
(the cash rewards have been nerfed in wotlk)
has practically reimbursed me for the flight training.
The cash rewards have decreased because the dailies give XP. Once you hit 80 (Or I assume they turn gray) the cash should return to its pre-WotLK values.
