The largest is counted. So you always have +15% from PoJ, but Crusader Aura overwrites it and gives you +20% instead.
I believe that the game will give you the largest +speed increase possible. For example, if you somehow got +21% from items/enchants, crusader aura/PoJ would have no effect (it wouldn't slow you down to 20%)
Edit: Oops, didn't mean to be redundant, I just wanted to accentuate that the mechanic of those pally spells themselves will choose the best combination of non-stacking vs. stacking speed bonuses to give the player the best total speed increase. I.e. picking up the speed-up buff in WSG, for example, won't be nullified by Crusader Aura, you just won't get Speed Buff on top of +20% from aura/PoJ. You -might- get Speed Buff plus boot enchants/riding crop/etc, which would trump Crusader and give you that larger benefit. Sorry, thought I'd clarify.

everyone seems to be forgetting another important benefit of epic flying: you can fly over enemy cities without being shot down.
if you try same thing on slow mount you will be shot down.
