Whichever one generates enough threat so that I can go all-out DPS. I've seen both classes succeed in that.
One of the best tanks I know tanks equally well as a Druid or a Warrior.

The only difference I have really seen is that Warriors are better-equipped (in terms of skills) to deal with Leeroy-type pulls.
When the party is operating effectively and not pulling more than they can handle, a Druid can be just as good as a Warrior.

I prefer my tanks armed with the goold old-fashioned sword'n'board not fur and paws. Each class can tank just fine, and while there are a few encounters here and there that one type of tank may be better for, in general it all comes down to personal playstyles and availability. i typically don't care; my guild uses up to 2 of each.

My only experience is in five-mans and heroic -- the player makes a way bigger difference than the class, imo. Tanking is a very involved role, and it really magnifies the problems of players with slow reflexes or lack of awareness.
Paladin tank can require the DPS to play a bit different, but druid/war is a tossup for me.

25 man raid bosses, I still prefer a warrior tank with a lot of mitigation, and not as much avoidance. (Obviously you need some avoidance still)
I find Druid tanks have the same problem as warrior tanks with a lot of avoidance. Their health spikes a lot, because when they don't dodge, they usually get slammed. This can make them really hard to heal and keep at a steady level.

As long as it's a good Tank, I couldn't care less if it's a Warrior, Druid or Paladin (WHAT?!? Paladins can tank??

Any good tank that generates enough threat to handle my crazy enhancement TPS.
I have mostly good experiences with prot warriors and paladins... yeah, I don't meet many protadins, but most/all of them are great tanks.

As a druid tank, myself, one of my favorite things to do is NOT tank bosses that punt against a wall so I can charge in mid-air. I get people yelling at me to reposition every now and then but I just do my thing. I find that so amazingly fun.
As for the which question ... I think the point about mitigation vs. avoidance is a very poignant one. In the very endgame, there's a reason Warriors are Warriors and Druids are hybrids. If Druids were viable as tanks for EVERYTHING, there would be no reason for Warriors.
That said, I think there are few instances that Druids cannot be quite effective in. I personally have a lot of fun in the 5-man atmosphere. Moving on to heroics has seemed to have weeded out a bit of the noobery and added a bit less mindlessness to the game. With normal-level instances I find myself over-pulling intentionally or running with 4-man groups just to spice it up a bit. I don't learn anything if I'm not being pushed, no? :)
