A priest is, in my eyes, the ultimate healer. The divine caster that has the lives of his or her teammates in total control. I toss heals here and there, I keep them alive, I shield them, dispel them, and generally act like the angel I'm supposed to play.
That, bundled together with the "hey, you're a good healer"-comments, just make my day.

i was holy for a very long time... epic-ed out. then i respecced shadow and am now in all epic again. i've dpsed & healed, and i think playing a priest is a lot of fun.
variety plays a big part in that. healing as a priest is more than just "bind all keys to flash of light & roll face on keyboard".
my dps may not be #1, but i've seen the diff of me being in the group with our healers & me being in the group with dps. the mana returns are awesome. i also like that i can drop shadowform & save the day at any time
either spec, mind vision & mind control are a lot of fun. i understand how OP mind control is in PVE, but i wish there were more mobs i could MC in heroics.

Do you ever feel like paladins outheal you with casual ease? That's kind of why I want to ditch my warrior - tired of paladins and their AoE aggro stuff achieving with a single stroke what it takes me insane effort to do. I want to make sure the same won't happen with my priest.
Paladins and priests have different strengths and weaknesses with healing. Paladins can't do heals over time which at first you think isn't a big deal, but during PvE or even PvP, HoT does help. They do have faster burst heals, but priests get a instant heal (Prayer of Mending) and binding heal is pretty awesome if you are getting hit and need to heal your party. Priests don't suck on healing like how everyone portrays them.

what specifically do you not want to be "out-done" on? because if one class was better than the other in every way, then noone would roll the other.
paladins have strong, fast, single-target heals, plus great survivability (reads: "are boring, but get that job done well")
priests have more versatility and have more efficient group heals, with low survivability

I've played a hunter and a shadow priest in the past, and quite frankly, I got bored with being DPS. I think healing is more challenging, and more interesting.
I enjoy playing a holy priest over any other type of healing class mostly because of the sheer variety of heals we have available. We have the most types of healing spells compared to all the other healing classes, so there are lots of options available to deal with different situations. You have to think about what you're doing, rather than mindlessly spamming one spell over and over.
You might hear some people complain that holy priests aren't the "best" healers for specific situations, because there are other healing classes that specialize at them better than we do. We're sort of a jack-of-all-trades healing class. We still can get the job done, though!

Priests are the most versatile healing class in this game. Period. ;-)
Neither druids, paladins nor shamans are better or worse than the priest class. Period.
(Given equal skill and equipment)
A priest hast the advantage to be able to fill all healing roles very well. The other classes are more focused on specific roles than the priest. They do not do better than a priest when tasked for their roles, but they have it a little easier and require less complexity.
So, if you want to heal, i would suggest a priest. ;-)
How do priests fare in a raid environment (10+ man)? Compared with paladins? It seems like a priest's sole advantage (AoE heals) would be negated by the fact that everyone's focusing on a single main tank. Is that the case?
You are very wrong here. ;-)
Neither do priests only have an AOE advantage, nor is anyone only focusing heals on the maintank.
Even Karazhan raids require a healers attention on the whole group and many mobs deal out damage to more than the tank.
