A deathknight can dual wield tank just as much as a warrior can tank buck nekkid.
It's possible, but not advised.

are far better reasons to say Frost is the tanking tree. Whilst Unbreakable Armour can be argued as comparative in damage mitigation to Bone Shield, the other two are unique to Frost.
As for tanking whilst dual-wielding, my main arguement for using it is the quicker pickup time on enemys, and that many of the "tanking" weapons in the game are 1H as warriors and paladins will tank using a 1H and shield.
Biggest arguement against is the massively increased number of parry's caused by your faster weapon swing and twice the number of attacks.
